Our history of workin' on da farm
For several years the Hylle Crawfish Farm was a family-owned operation. Every member of the Hylle Crawfish Farm family held important roles in the day-to-day activities of raising crawfish. We had over 175 acres of crawfish ponds to maintain, giving us plenty of work to go around.
The day began with checking the 3,000 crawfish traps from one of three custom designed boats from Louisiana (these ain’t no pirogues ‘pee rows’). The boats had wheels on them and ran on land, in the mud, or in the water.
Once the crawfish were caught, they were returned to the shop and hand sorted. The petite (small) crawfish returned to the ponds.
We cleaned out the impurities of the remaining crawfish using a process called purging. At the end of this process, the crawfish were weighed and bagged to sell.
This was our daily routine until season's end.
Near season's end, the crawfish burrowed into the mud as far as 8 feet down. At the end of the season, the catch dwindles and the shells start to harden.
This is Mother Nature's way of saying, "See ya'll next year!"
